FLANK (BIG 12)

Long, hardy cut that's not fancy but produces lean and sturdy staples. The meat in "meat and potatoes," upon which the heartland was built

LOIN (BIG TEN)

Porterhouse, T-bone and sirloin-some marquee cuts-offer taste, texture and heartiness. Detractors claim they're overrated, especially for the price

ROUND (PAC-12)

The majority is tough and chewy, while the filet, near the top, is tender-some would say soft-and delicious if inconsistent
